Use Your Loaf!

Use your loaf, an old English cockney rhyming slang for 'do the sensible thing'. Use your loaf > loaf of bread > head. Use your head. Why am I telling you this? Well, there's a new baker in town producing a very tasty loaf indeed.


Based in Discovery Bay, The Sourdough Co. has firmly established itself as a high-class and delicious sough dough bakery. Rita, who is the mastermind behind the venture, sent me some delicious treats to try out.



In this particular box of treats was the following:

1.⁠ ⁠Original/classic sourdough Loaf - the big one

2.⁠ ⁠⁠Sourdough pretzel buns - The round rolls at the bottom

3.⁠ ⁠⁠Dark choco chunk cookies - Top right

4.⁠ ⁠⁠Butter cookie bites - Bottom left


The kids were at the cookies before I had a look-in. They were deliciously chewy, not too sweet with a sprinkling of sea salt creating that umami experience in your mouth. The bread was crunchy with a fantastic deep flavour. I had mine slathered in butter and jam.


Rita started baking at the age of 11, but sourdough baking started 5 years ago as a means to feed her family tasty and nutritious bread that's hard to find locally. She was soon baking more bread than the family could eat and The Sourdough Co. was born.


But why sourdough? Rita explained it's healthier than regular bread; wild yeasts are more digestible and support gut health and have the added bonus that the loaves have a longer shelf life.


Rita's baking is greater than the sum of its parts. As Rita explains "Our journey isn't just about bread; it's a testament to love, healing, and the pursuit of passion. It reflects our commitment to baking with heart and soul, aiming to make the world a better place—one loaf at a time".
